Baked Vanilla Donuts with Berry Glaze

Happy Valentine's Week! So I found these Baked Vanilla Donuts with Berry Glaze from Lunches + Littles (@lunchesandlittles on Instagram) and thought they were the perfect Valentine's Day treat. How doesn't LOVE donuts?? Plus they are all-natural, gluten-free and dairy-free!! Enjoy :)

WHAT YOU NEED (12 donuts):

🍩 FOR DONUTS: 1 and 1/2 cup of Bob's Red Mill #glutenfree flour blend, 1/4 tsp baking soda, 2 tsp baking powder, 1/4 tsp salt, 3/4 c + 2 tbsp Ripple Foods (other other non-dairy) Vanilla Milk, 1 tsp apple cider vinegar, 1/2 c sugar, 3 tbsp canola oil, and 1 tsp pure vanilla extract
🍩 FOR ICING: 1 c powdered sugar (sifted), 1 cup Driscoll’s blueberries, 5 raspberries and 1/2 c water
🍩 *Optional: sprinkles

HOW YOU MAKE THEM:
🍩 Preheat oven to 375 degrees. Spray donut pan(s) with nonstick spray. Set aside.
🍩 In a mixing bowl sift together: flour, baking soda, powder, and salt.
🍩 In a separate bowl, combine Ripple Milk and vinegar, stirring well. Set aside a couple of min.
🍩 Next, to milk mixture add sugar, oil, and vanilla extract. Then add in flour mixture until just incorporated.
🍩 Transfer to prepped pan(s). Bake approx. 15 min. or until lightly browned.
🍩 When done, remove from oven and transfer to cooling rack.
🍩 To make glaze: place berries and half the water into a saucepan over medium heat. Cook down approx. 8 min., adding additional water as needed to ensure berries do not burn. Remove from heat and strain.
🍩 Add strained juice to powdered sugar and whisk to combine. Use more/less depending on desired color.
🍩 Once cooled, dip donut tops into glaze, then return to rack and allow to dry. If using sprinkles, sprinkle immediately. Once glaze sets- enjoy!
